A Culinary Extravaganza Unveiled: Des Moines Baillage's Exquisite Dining Experience at Allora Cafe.


On the splendid evening of April 28, 2024, members of the Des Moines Baillage of the Chaîne des Rôtisseurs gathered at the charming Allora Cafe, graciously hosted by Dore Bakery of the LaValle Hospitality Group. Amidst the ambiance of Allora Cafe's beauty, a symphony of flavors awaited, crafted meticulously by Chefs Michael LaValle and Marc Navailles, under the attentive guidance of Allora's John Welch.


The menu, an ode to culinary finesse, unveiled a succession of delectable courses:


Appetizers: The evening commenced with an array of tantalizing treats, including the delicate Mini Polenta Bites and Basil Leaf Bubbles, setting the stage for a culinary journey ahead.


Amuse Bouche: A Spring Flowerpot of Scallop and Lobster Mousse en croute delighted the senses, offering a delightful prelude to the gastronomic feast that awaited.


Premier Plat: Embarking on a culinary adventure, guests savored the Fresh Stuffed Morels, a delightful indulgence that encouraged a playful hunt for hidden treasures.


Deuxieme Plat: The Prosciutto-enrobed Seabass in Lemon Basil Beurre blanc emerged as a culinary masterpiece, captivating palates with its harmonious blend of flavors.


Plat Principal: A highlight of the evening, the Grilled Lamb Chop with Thyme Jus and Asparagus Risotto, showcased culinary expertise at its finest, leaving guests longing for more.


Mignardise: The Petite Croustade de Fromage Bleu Farmstead Reserve Maytag offered a savory interlude, perfectly balancing the preceding flavors.


Dessert de la Dore: Concluding the feast on a sweet note, guests indulged in the Petite Strawberry-Rhubarb Panna Cotta Tarte, a delightful finale to an unforgettable culinary journey.


Complementing each dish, a carefully curated selection of outstanding wines from the Chaine Cellar enhanced the dining experience:


Ramey Ft Ross Chardonnay 2021, Sonoma Coast, delighted with its vibrant notes and exquisite balance.


Chateau Vieux Maillet Pomerol 2019, Bordeaux, France, offered a rich tapestry of flavors, captivating the discerning palate.


Coltibuono Vin Santo Del Chianti Classico, Tuscany, Italy, provided a sweet and satisfying conclusion to the evening's festivities.


Accompanying these, an array of sparkling gems including the 2020 Konstantin Frank Brut from Finger Lakes, NY, the vibrant 2022 Brokenwood Semillon from Hunter Valley, Australia, and the structured elegance of the 2021 Cristom Eileen Vineyard from Oregon Pinot, elevated the dining experience to unparalleled heights.
