
2023 Hyperion Field Club Chaine Holiday Dinner.
The Des Moines Bailliage of the Chaine des Rotisseurs gathered for their first annual holiday bash at the Hyperion Field Club, and oh, what a festivity it was! Executive Chef David Perez and his fantastic crew, mostly composed of Iowa Culinary Institute students, worked their magic to create a dinner that was nothing short of a culinary spectacle. Set in one of the club's dining rooms, we were treated to panoramic views of our dazzling city lights, setting the perfect backdrop for the festivities.
Now, let's talk about the menu – a symphony of flavors and delightful surprises that left our taste buds satisfied!
AMUSE-BOUCHE
- Savarin Tuna Tartare: Caviar, capers, shallots, harissa aioli
- Duck Prosciutto: Foie gras mousse, cranberry gelée, wonton cup
STARTER
- Demeter (Goddess of the Harvest)
Late Harvest Salad: Cauliflower puree, baby kale, radishes, baby root vegetables, heirloom cauliflower, green goddess emulsion
MAIN
- Poseidon (God of the Sea)
Agua Chile Negro: U10 scallop, cucumber, pickled onions, Fresno peppers, petite cilantro, avocado mousse, tamarind and soy jus
- Hyperion (Titan God of Light)
Filet: Petite filet, fondant potato, rompope hollandaise sauce, asparagus tips
- Artemis (Goddess of the Hunt) Forest
Lamb: Wild onion ash-encrusted lamb, celeriac puree, mushroom, truffles, Jamaica (hibiscus flower) lamb demi
DESSERT
- Hades (God of the Underworld)
Death By Chocolate: Chocolate ganache cake, chocolate sauce, Grand Marnier and orange gelée chocolate tuile with gold leaf.
